If you know me, you know I’m a cake snob. Box mixes are okay, but homemade cakes are my true love. Cake cooked in the microwave, though? I admit, in the past I’ve been seduced by the promise of piping-hot cakey goodness in only a few minutes, or the cuteness of one serving of cake in a coffee mug (and no mixing bowls to wash).

Yet every microwave-cake recipe I had ever tried was a disappointment. My usual response to those recipes now is, Rubbery, unevenly-cooked cake that doesn’t really satisfy any craving? Bleah, no thank you. I’m glad I tried this recipe from Prudent Baby, because I was very pleasantly surprised by how tasty it is. And it’s easy! I’ve made it about five times, tweaking the recipe to suit my tastes, and everyone who has tried it has loved it.

Soften a tablespoon of butter in each mug, 10-15 seconds in the microwave on medium power. You want the butter soft but not melted. (The mug[s] you use can be large or small, it doesn’t really matter. If you use a smallish mug, the finished cake will puff out over the top a little, which is fine.)

Add two tablespoons of sugar and stir till it’s fluffy and creamy.

Pour a little bit of vanilla into each mug. I just eyeballed it, but if you want you could measure out 1/4 teaspoon of vanilla.

This step is optional. If you don’t mind a crumbly cake (or you can’t eat eggs) you can skip it. If you want a chewier, more, uh, cake-like cake then mix in about half an egg per mug. The first time I made these, I happened to have egg yolks in the fridge left over from making an angel food cake, so I just used one yolk per mug. You could also break an egg into a bowl and lightly beat it, then use half of that. Or you could even use a whole egg, if you want. It will just make for a rather dense, eggy cake which is not necessarily a bad thing.

Add two tablespoons of vanilla or plain yogurt (or sour cream, or even sour milk or buttermilk in a pinch) to your mug and stir well.

Mix in 1/4 cup of flour, 1/8 teaspoon of baking powder, a sprinkle of cinnamon and a pinch of salt.

Now for the best part: the streusel topping! In another bowl, for each mug mix together 1 tablespoon of brown sugar, 2 tablespoons of flour, and 1 teaspoon of cinnamon. Cut 1 tablespoon of cold butter into small bits and add that to the bowl, then use your fingers to rub and smoosh the butter into the flour mixture till it’s well combined. Sprinkle that over the top of the cake batter in the mug.

Stick your mug into the microwave and cook on high for 1 minute, and in additional 10-second increments as needed. In my microwave, one mug of cake is done in 1 minute 20 seconds, and two mugs of cake take about 2 minutes 30 seconds.

Ta-daa! Coffee cake in a mug, in less than ten minutes. Just be sure to let it cool a bit before you eat it. Serve with pickled eggs and pretzels for an excellent late-night supper.

Microwaved Coffee Cake in a Mug
serves 1

• 1 Tbsp butter
• 2 Tbsp sugar
• 1/4 tsp vanilla
• optional: 1 egg, lightly beaten (or 1 egg yolk or 1 egg white)
• 2 Tbsp vanilla or plain yogurt
• 1/4 cup all-purpose flour
• 1/8 tsp baking powder
• sprinkle of cinnamon
• pinch of salt

Streusel Topping:

• 2 Tbsp all-purpose flour
• 1 Tbsp brown sugar
• 1 tsp cinnamon
• 1 Tbsp butter

1. In a large or small mug, soften (not melt) butter in microwave for 10-15 seconds on medium.
2. Add sugar and mix till creamy and fluffy.
3. Add vanilla.
4. Stir in the yogurt.
5. Add flour, baking powder, cinnamon and salt. Mix well.
6. Make the streusel topping: mix flour, brown sugar, and cinnamon in a small bowl. Add cut-up butter and rub into flour mixture till well-combined.
7. Sprinkle topping over batter in mug.
8. Cook in microwave on high power for one minute, plus additional 10-second increments as necessary. When the cake looks mostly dry, it’s done. Let it sit for a minute to finish cooking.

Elliora was so teeny nine months ago. Wow.

Another tooth! Last night she bit into a piece of pizza and came running to me, demanding that I pull the tooth out. So I did. Ta-daa!

Okay, that’s a stretch. I’m basically ignoring the chocolate theme today, but this seemed more important. My favorite local pottery-painting studio, the one where I first painted six years ago, the one where dottery was born with this plate, is closing.

The owner doesn’t really want to close, but for various reasons (including her two young kids and the depressed economy) it’s the best thing for her to do right now. She’s still hoping that someone might buy the studio from her and re-open it, particularly because it’s the only pottery-painting studio in the area.

Today was the last day to paint. So we went and painted one last time. *sniff*

I thought it would be cool to have Elliora paint an ornament. I let her pick the paint colors and choose which ornament. Following her big sister’s example, she already has very definite, clear opinions about what she wants. (I don’t have a picture of E painting because I was too busy making sure she didn’t grab the ornament or palette and throw them onto the floor while simultaneously preventing her from smearing her painty hands all over her clothes, the table, the high chair…)

We sure will miss this place. I hope someone buys it soon and re-opens it.

My mom let me eat the rest of the chocolate from Elliora’s Advent calendar to take my self-portrait. She doesn’t really eat the chocolate, anyway. She just gets a tiny bite and my mom and I eat the rest.

You know that life overload I wrote about a few days ago? All of those things are still true, but I’m feeling better about it all. I don’t know why, exactly. Maybe partly because Elliora likes to accessorize, which is adorable:

Elliora loves headbands for some reason. She’s forever picking up ones that Annalie has discarded around the house and attempting to put them on, usually just setting them on top of her head tiara-style. Today Annalie and I were both in the kitchen when Elliora came crawling in from the living room with this headband in place on her head. I asked Annalie if she’d helped her put it on, and Annalie said, “No, I was in here with you!” I guess that means Elliora managed to get it on all by herself. Not bad for a 1-year-old.

Also, I had a headache for three days on and off thanks to storms that were near us. Yesterday it finally rained here, and with the rain came relief from the headaches. And pretty Christmas-light reflections.

Helloooo! I think this is the first time in a year I’m genuinely excited about 7 Days. And (touch/knock on wood) it’s December and I’m not sick. It’s probably because I caved and got a flu shot this year. I was so sick all last fall and winter, and I didn’t want to repeat that.

So. Let’s do this thing!

I saw these jumbo ornaments hanging outside Trader Joe’s last week and instantly made a mental note to use them for a self-portrait. It was rather windy so it was tricky to get a shot that wasn’t blurry. But I persevered.

What Annalie had to say about her Day 1 photo, “secret surprise”:

Some of you looking at this photo are going to get a special surprise from us in the mail, so I can’t tell you what I’m mailing. But have you ever seen anybody mail a jar before? We mailed Easter eggs once, and my mom mailed a small package of jelly beans!

This morning we went to the post office and the grocery store. We’ve been spending quite a few mornings running errands lately, doing Christmas-related things. Elliora and Annalie have both been troupers, taking multiple trips to the grocery store, post office, and Target in stride, with only the rare hunger- or exhaustion-induced tantrum. Now that Elliora is older and walking, she and Annalie have a lot of fun with each other and keeping each other entertained during otherwise dull moments. Apparently having a sister is awesome.

These are just a few of the many things I’m thankful for today, as we clean the house and prep food for my mom’s arrival tomorrow and our delayed Thanksgiving feast. And I’m thankful for you! Without all of you—reading and commenting, encouraging me and venting with me and laughing with me at the craziness of life—this blog wouldn’t be nearly as much fun to write. Whether or not you’re in the U.S., I wish you happiness today, and a grateful heart.

October 20: “Pardon me, Mom. I need to take this important call on my markerphone.” This was the beginning of Elliora pretending that many things—hairbrushes, barbies, remote controls, dollhouse furniture—are phones.

October 22: We drove down to North Carolina for our nephew Leo’s 6th birthday party! Annalie had fun playing games in the arcade and loved playing miniature golf for the first time.

Dana took this shot of our family. It’s not perfect—Elliora was overdue for a nap and resisting sleep and quite cranky—but I like it anyway.

Annalie and Leo had a blast playing on the trampoline, as usual.

They also spent some time playing in Leo’s room, making food for all of Leo’s many animals. I love how well they get along. Elliora spent a lot of time blowing her own mind, putting things into and taking things out of a toy hamster ball.

October 24: Hot dog sandwiches and roasted asparagus for lunch. That’s how we roll.

Since Elliora recently started sleeping in her own room, we decided it was time to make it a bit prettier and more functional. I am the rare mom who has never gone crazy designing a nursery when she was pregnant. I think I used to care about stuff like that, but being in the Navy for 16 years, living mostly in rentals, and moving every couple years has made me a lot more indifferent to that kind of thing. Elliora’s room was thrown together with stuff we already owned (dresser, changing table, bookcase) and stuff we bought in a couple of quick trips to IKEA (crib, curtains, rug).

The blue quilt up on the wall is mainly for noise reduction. No one made it for us; my mom bought it somewhere ages ago because it was blue (Annalie’s favorite color) and had stars on it (I like stars). The rocking chair belonged to Troy’s Grandpa Gronberg, who passed away shortly before we got married. Troy’s sister Dana had this chair at her house, but it was in storage, not being used. So she let us borrow it to use in Elliora’s room for a while.

I was feeding Elliora her dinner when she grabbed the fork out of my hand and fed herself. By the end of the meal she was quite good at getting the right end of the fork into her mouth. Now she tends to get a little annoyed if I won’t let her have the fork and feed herself.

October 25: I had to fudge the Elliora-and-Katy photos for 11 months, since we were going to be in Omaha by the time she turned 11 months old and I didn’t want to skip another month.

October 26: While we were in Omaha, the girls and I all shared one small bedroom. It had its disadvantages, but one advantage was that seeing Annalie and Elliora sleeping next to each other every night was adorable.

October 27: Annalie asked for, ate a couple bites of, and then decided she didn’t want a ham roll-up (deli ham rolled up in a tortilla). She handed it to my mom, who was holding Elliora and chatting with me. Elliora grabbed the roll-up when my mom wasn’t paying attention and went to town on it.

October 28: Demonstrating for my mom and brother how the Ergo can be comfortably used to carry toddlers. Aurora thought it was pretty fun.

The geekiness is strong in my family.

October 29: This was a full day. First, I met Kassie, Rainbow and Katrina to paint pottery. Rainbow wasn’t so sure about painting pottery at first, but she surprised herself by having a lot of fun. I mean, she expected to have fun talking and laughing but I don’t think she expected to enjoy the painting part as much as she did.

It probably helped that she had an idea for what to paint before she even got there. We were talking about how cool it was that we’d reconnected and become friends via the internet, when we were only friendly acquaintances in high school and college. Rainbow suggested we needed matching necklaces, and I said, “How about mugs?” Internet friends, FTW!

After painting, we said good-bye to Rainbow and walked a couple doors down the sidewalk to B&G Tasty Foods. My doctor’s office when I was growing up was in the same strip mall as this diner. I had not been there for at least 25 years. The decor has been updated in a really great way! The food’s still the same (their specialty is the interestingly-named loose meat sandwich) and is, as advertised, quite tasty.

But even if the food hadn’t lived up to the name, I wouldn’t have minded because I got to eat with two of my favorite people.

After Elliora’s afternoon nap, we headed over to Katrina’s house for more fun. Kassie and Joe were there too, and our friends Jeff and Alma and their daughter Isa.

Elliora is apparently the best toy ever. The boys dragged and pushed Elliora around the house for a while on a plastic lid, which she loved.

As far as Annalie was concerned, though, the boys’ pet rats Ginger (above) and Steve were the best thing ever. She was rather sad to hear that we probably won’t ever get any kind of pet rodent as long as we have cats.

And I’m stopping here. I think Halloween weekend is gonna need its own post.

This time of year in Omaha is so pretty!

Yesterday we went trick-or-treating in the Old Market with friends. Annalie and Elliora are both peacock princesses this year. Let’s just leave the fact that peacocks are male out of it, mmkay? Because look! Cutie-pie peacock princesses!

This morning before Ben took Aurora over to her mom’s house, I put her hair up in two ponytails, which she thought was pretty neat.

I like this shot because you can see Annalie’s blue nails and Elliora’s patience with her bossy big sister.

I look like I’m modestly covering my chest, but really I’m just resting my hand on the back of the bench in a weird position. It just looks like I’m a maiden aunt unaccustomed to showing so much décolletage.
