chocolate chip-coconut-walnut cookies

Someone on Twitter mentioned that coconut chocolate chip cookies were the best thing since sliced bread. For some reason, that made me think of substituting coconut oil for the butter/shortening in my go-to chocolate-chip cookie recipe. I thought about it for days before I had the chance to try it.
Oh baby, were these ever good. The coconut flavor was noticeable but mellow, not overpowering. I toasted the walnuts before adding them to the dough, which adds that extra bit of oomph. Three dozen cookies lasted approximately a day and a half. We forced ourselves to save a few so my mom, who loves coconut, could try them when she and my dad got here Saturday. The only reason I haven’t made them again yet is that we didn’t have any more chocolate chips in the house. Troy went to the store tonight, and picked me up a bag of chocolate chips. I see more of these cookies in my future. Once we finish eating the blondies I made last night, and the sugar cookies Annalie begged me to make this afternoon…
Chocolate Chip-Coconut-Walnut Cookies
- 1 cup coconut oil
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs, at room temperature
- 4 tsp good vanilla extract
- 1 3/4 cup all-purpose flour
- 1 cup whole wheat flour
- 2 tsp baking powder
- 2 tsp kosher salt
- 2 cups semi-sweet chocolate chips
- 1 cup flaked coconut (optional)
- 1 cup chopped walnuts
Preheat oven to 375F.
Combine flour, baking powder and salt in a small bowl and mix with a fork. Set aside.
Place coconut oil in a large microwave-safe bowl. Microwave at 50% power, stirring every 15 seconds until very soft. Add sugars and vanilla and beat well. Add eggs one at a time, beating until creamy.
Add flour mixture to sugar mixture a half-cup at a time, stirring well. Add chocolate chips, coconut, and walnuts. (If you want to toast the walnuts before adding them to the dough, spread them on a cookie sheet and bake at 350F for 5-10 minutes, stirring once or twice, till the nuts are darker and fragrant.)
Drop onto ungreased baking sheets in large rounded tablespoonfuls. Bake 10-12 minutes, till golden brown. (Undercooking is better than overcooking!) Cool on baking sheets for 5-10 minutes, then remove cookies to cooling racks. Share them with anyone you want to love you forever.

Right now I have lavender cookies in the oven. I never used to bake at night, but knowing you has taught me that just because the sun is asleep doesn’t mean my oven doesn’t work. So thank you for these cookies. Heh.
coconut is totally my magic ingredient in choc. chip cookies! I do it all the time! I’m still very stingy with my coconut oil so I’m just sticking with butter for now, but I do want to try it out sometime.

I almost bought coconut oil the other day but it was so expensive I couldn’t fit it into my budget. All your baking is making me drool.
