Spanish Leftover Rice

I had leftover rice in the fridge the other day, and wondered if I could use it to make Spanish rice to go along with the veggie-ladas that Brenda was making. I knew that usually Spanish rice is made with uncooked rice, but I also knew that Chinese fried rice is made with day-old cooked rice, so it had to be possible, right?
I happen to know because I’ve eaten it before that Madge makes a mean Spanish rice. So I IMed her a plea for help and advice. She gave me some tips then said, “I hope it doesn’t end up a gooey tomato lump. Let me know how it turns out!” No gooey tomato lumps, Madge; it turned out beautifully.
Spanish Leftover Rice
Heat the oil and butter in a large skillet over medium heat till butter is melted. Add onion and saute for a few minutes till is soft. Add garlic and saute another minute. Add rice and saute a couple of minutes more. Add 1/2 c. of the tomato sauce and about 1/4 c. water and stir. If it looks like you need a bit more tomato sauce, feel free to add some more. Stir in the coriander and bring to a simmer. Reduce heat, cover and let simmer 15-20 minutes, stirring occasionally, till sauce is absorbed and rice has lost most of its stickiness. Salt and pepper to taste and serve piping hot.

It looks AWESOME. Now I’m torn between making my spanish rice the traditional way or waiting for leftover white rice and giving this a go!
