If you’ve known me for any length of time, you probably have figured out that I am a night owl. I like mornings in theory—I really do—but if I have a choice between staying up late or getting up early to finish a project, I’ll pick the all-nighter every time. I get a second wind around the time most people are putting on their jammies and making sure the alarm clock is set. The times I have gone to bed early with good intentions to get up at the crack of dawn have generally ended with me oversleeping and scrambling madly to compensate.

Usually when I stay up late I’m reading or watching a movie or maybe editing photos. I often crochet late into the night when I’m nearing the end of a blanket. Tonight, I made fudge.

Cooking the milk, sugar & marshmallow creme

The recipe I used is T. Skaarup’s Lunatic Fudge, which I have been using since 1997 with excellent results. It’s ridiculously easy to make and tastes divine.

Chocolate chips and walnuts

Skaarup used to have the most fabulous site full of cookie and fudge recipes, all of them kitchen-tested and replete with detailed notes and explanations of the food chemistry involved. All the basics of good baking that I know, I first learned from reading that site and baking with some of those recipes. Sadly, the site was shut down some time ago. Happily, Skaarup allowed all of the recipes to be shared as long as they weren’t modified, and many of them are still scattered about the internet.

Mixing it all together

I bake a lot. It’s very annoying to discover after you’ve decided to make chocolate chip cookies that you’re out of chocolate chips, so I tend to keep my pantry well-stocked. I had all the necessary ingredients for Lunatic Fudge and from start to finish it only took me about fifteen minutes to make. Of course, it has to cool at room temperature for a few hours. Normally the waiting is the hardest part, but luckily I’ll be sleeping while that goes on and in the morning my fudge will be ready to eat.

    You are crazy! I love you and will surely enjoy the fruits of your labor*, but you are crazy! Of course, I try to play it both ways because I am both a night person and a morning person. It is tough sometimes, at least until this this becomes available!

    *it was all I could do to not try some out when I saw it on the counter this morning at 7am. I never know for sure if it is for us or for someone else, so I have learned not to assume.

    Not “nutty” at all for making fudge at 1am! I do things like that too…after the kids have gone to bed, I’ll bake cc cookies so that they can have them for their lunches the next day. The fudge looks divine, by the way :o) Yummers!

    Well, I for one don’t think you’re crazy at all. You wouldn’t believe the stuff I do in the middle of the night. I am completely time twisted. I go to bed in the morning, sleep until between 3 and 5 pm, and then get up for the day. So I’m ALWAYS up in the middle of the night. I have cooked entire meals at night. But I’ve never made fudge. Ever, not even in the daylight. I love fudge, don’t get me wrong, but the fudge I’ve tasted that is homemade is always grainy and I like fudge that is buttery smooth. I heard that you can’t get it smooth unless you have a huge marble slab, and unfortunately, I’m out of marble.

    Is this grainy or smooth? It sure LOOKS good.

    I love fudge – but I like it HARD. I want it to break apart and I want it dark. Dark, hard, fudge.

    I can do nights and I can do mornings. I just have to catch sleep somewhere in between.

    I did miss the recipe because I was drooling!! I am going to give them a try. The only fudge I’ve ever made was a fudge wreath thing that took all of 10 minutes. I got the recipe from a very annoying food network personality who shall remain nameless… :-)

    Fellow night owl, here. HARDCORE night owl. To the point that I almost start hissing “It Burns Us” at the early light of dawn.

    That said, I cannot bake well. Cooking? TOTALLY.

    Too bad you don’t live around here (And that I am a new commenter), because we could have some FABULOUS midnight munching goin’ on.

    Clearly, the take-home message here is “make fudge at night so you can have fudge for breakfast”.

    Also, I’m often in my jammies before dinner, and checking my alarm clock at 9:30PM. The term All Nighter has been stricken from my vocabulary for some time now (unless you count staying up all night with infants, but those seem somewhat less than productive.)

    Biscotti. Fudge. I think both could go great with coffee.

    I miss being able to stay up all night and craft…especailly quilt. Thigns are more magical at night – Christmas lights for instance. Nothing special by day, but hold onto your hat at night. It’s like that. I feel like I’m ‘getting away with something’ when I stay up late to work on something I’m enjoying doing. I think better at night too. Now…if I can just figure out a way to ditch the day-job…
